Purchasing two 34oz Top Round Broil Steaks, we set them out the night before and began to tenderize, marinate, and season them for a minimum of 24 hours.  

Concerning the recipe, I use a mixture of the following ingredients:

  • Garlic Powder

  • Bacon Bits

  • Zesty Italian Style Salad Dressing

  • Creole Cajun Style seasoning

We took these ingredients and massaged them into the meat, being careful and paying special attention to the grains and the way the meat was cut.  After doing this, we set them in the refrigerator and let it marinate overnight.

Note: When selecting a steak from the market, always pay attention to the grain at which the steak was cut, tenderness, quality, and freshness.  If in doubt, ask the butcher.

The following day it was time to grill!  I opened the fridge and sampled some of the seasoning on the steak and it was seductively delicious!  Now it was time to prepare the side dishes!  We decided that with any traditional steak, corn on the cob, and green beans are the best southern side dishes.      

So placing the stove on high and putting the water to a boil with a few tablespoons of butter in it, we set the entire corn & cob into the water for about 15 minutes, then placed the stove on low to simmer for another 20 minutes.  Boiling the green beans the same way, we let them simmer and I began to make my appetizers.

Now, I don’t have a clue as to what these things are called but they are absolutely and insanely delicious!  They go along the lines of being “terrible for your body” but “good for your soul”.   So with that in mind, here is a list of what you’ll need:

  • Thick cut bacon

  • Tater-tots

  • Cheddar cheese

  • Jalapenos

  • Wooden Toothpicks

  • Top with more cheese!

The first thing to do is prepare all of your ingredients.  You’ll want to keep the tater-tots frozen until you wrap them.  Cut your jalapenos into thin slices, about the thickness of 1-2cm and place them to the side.  If you would like a spicier snack, then leave the core intact.       

Prepare the thick cut bacon by cutting it into thirds, just large enough to wrap the tater-tot, jalapeno slice, and cheese.  Prepare the cheese by cutting it into the same length and width as the tater-tot.      

Once all the ingredients are prepared, take one tater-tot and set a piece of jalapeno slice and a piece of cheese on top of it then wrap the combination of the ingredients with a slice of bacon.  To hold the contents together, simply place a wooden toothpick through the combination of ingredients.  Continue doing this until you have used all of your ingredients.       

Once all of the appetizers are prepared, place the oven to 475°F and let cook for 15-20 minutes or until bacon is nearly cooked.  At this point and time,  carefully take the snacks out of the oven and place another layer of cheese over the top of the half cooked food.  While you are doing this, the oven should be re-set to broil.  When you have placed more cheese over the appetizers, simply place the ingredients back in the oven to broil until bacon is crispy.

Now that all of the food is prepared, sit down, make a plate and enjoy some good homestyle food!
