Pork & Shrimp Vermicelli

While exploring the wonderful State of Arizona in between a visit to the mystical town of Sedona & the Phoenix Zoo, I had the pleasure of trying Vietnamese Cuisine for the very first time.

The dish of choice: Pork & Shrimp Vermicelli.

In short, this modestly filled bowl was layered to perfection.  Starting with a base of fresh, crisp bean sprouts, lettuce and diced cucumbers it was then topped with a thick layer of rice noodles.  Placing the grilled shrimp, pork, and scallions on top, they accompanied the dish with diced basil and peanuts only to be drenched in a mind-boggling fish sauce.

The fish sauce was mixed with vinegar, water, sugar & sliced carrots creating the perfect amount of sweetness to an already mouthwatering meal.  At this point, it was time to break out the chopsticks and get down to business as each and every bite left a life-altering experience that would change my life for years to come!
